Pulled from my Rancilio Silvia v1 with Auber PID, naked portafilter and LM-style basket. This is my take on a double ristretto: 1oz in 22 seconds with a very fine grind. Glass is a Bodum double-wall 'Assam.' Beans are cheap, week or so old Lavazza Qualita Oro (gold bag), and as such are blonding a bit towards the end. I prefer the Top Class or Super Crema beans, but both are harder to find here in Ottawa. PID is set to 105°C (221°F) at the top of the boiler, and gives an exact temperature of 94°C at the puck (204°F). Recovery time to displayed set temp is ~75s, while recovery time at the brew head is ~50s (difference due to temperature swing at the water inlet). Overshoot with these settings is approximately 3°C.
